Ingredients

  • 2 Tbsp Canola Oil
  • 1/2 cup Onion, chopped
  • 1/2 cup Red Pepper, chopped
  • 3 Garlic Cloves, minced
  • 1 1/2 cup Chicken Broth
  • 1/2 cup PB Crave Cookie Nookie Peanut Butter
  • 1/2 tsp Cumin
  • 10 oz. Peas
  • 1 cup Couscous

    Instructions

  1. Heat oil in a saucepan over medium heat. Add the onion, red pepper and garlic and cook until fragrant. Add broth and bring to a boil.
  2. Whisk in the peanut butter and cumin. Season to taste and add the peas. Bring to a boil and stir in the couscous. Remove from the heat and cover. Let sit for 5 minutes until all the liquid is absorbed.
