Ingredients

    For the Peanut Butter Cookie Cups:
  • 1/4 cup PB Crave Cookie Nookie Peanut Butter
  • 2 Tbsp Sugar
  • 2 Tbsp Brown Sugar, packed
  • 1/4 tsp Vanilla
  • 2 Tbsp Egg Whites
  • 1/2 cup Oat Flour
  • 1/4 tsp Baking Powder
  • 1/8 tsp Salt
  • For the Filling:
  • 1/2 Banana, thinly sliced
  • 1/4 cup PB Crave Cookie Nookie Peanut Butter
  • Whipped Cream for topping

    Instructions

  1. To make the cookie cups: In a medium bowl, beat together the peanut butter, sugar, brown sugar, vanilla and egg white.
  2. In a small bowl, stir together the oat flour, baking powder and salt. Add the oat mixture to the peanut butter mixture and stir until a dough forms.
  3. Cover and refrigerate for at least 2 hours.
  4. Preheat your oven to 350 degrees F and spray a mini muffin tin with cooking spray.
  5. Press 1/2 tablespoon of the dough into each muffin cup and mold the dough so that it is pressed on the sides and hallow the middle out.
  6. Bake until golden brown, 10 minutes.
  7. When they come out, gently press the middle in to hollow out the middle again. Let cool completely.
  8. Press one banana slice in the bottom of each cookie and cover with peanut butter. Top with whipped cream.
